Chicken Chow Mein – Mema’s Style is a simple Chinese recipe to produce a dish that is so tasty, you will think it was professional cooked. No more takeaway meal will be needed once you have tried this recipe. Mema was an elderly lady who lived in my village who everybody knew. She loved to cook and taught so many people that left overs are not rubbish. Whilst this recipe takes me 10 minutes, Mema could cook it before I had even poured a drink. I normally serve these with Prawn Dim SumBeef in Oyster Sauce and Chinese Egg Rolls. That is a meal for 4 people and all of the recipes are available in our Chinese category.

  • Cook the noodles in a pan of boiling water for 3 minutes until al dente.
    150 g egg noodles
  • Drain, then rinse under cold running water and drain again to stop the cooking.
  • Drizzle with a dash of sesame oil and toss through to prevent the noodles from sticking to each other.

  • Put the chicken strips in a bowl and season with a dash of light soy sauce and the five-spice powder.
    300 g chicken breast, 2 tbsp light soy sauce, 1 tsp five-spice powder
  • Mix well, then lightly dust the chicken strips with the cornflour.

  • Heat a wok until smoking and add the groundnut oil, then add the chicken and stir fry for 3-4 minutes, or until the chicken is golden-brown and cooked through.

  • Add the red pepper and stir fry for about 1 minute and add the bean sprouts and spring onion and stir fry for a further 30 seconds.

  • Stir in the cooked noodles and season with the soy sauce, a dash of sesame oil and freshly ground black pepper.

  • Place the noodles onto a serving plate and serve immediately.
