A slightly different take on an Italian classic. The chicken adds a slightly different texture that makes a good change to the norm. I don't tell the family I have changed the protein and they always claim how good it taste. My little secret I think.

  • Heat oil in a large skillet over medium heat.
    1 tbsp vegetable oil
  • Add chicken, onion and garlic; saute until chicken is mostly cooked through, about 10 minutes.
    3 large Chicken Breasts, 1 medium white onion, 2 cloves garlic
  • Stir in the chopped tomatoes, mushrooms and Italian seasoning.
    4 button mushrooms, 30 oz chopped tomatoes, 1/2 tsp Italian seasoning
  • Cook for about 5 minutes, stirring frequently.
  • Reduce heat and stir in the sugar.
    1/2 tsp sugar
  • Simmer for at least 15 minutes.
  • Meanwhile, bring a large pot of lightly salted water to a boil; add rotini pasta and cook until al dente.
    4 cups rotini pasta
  • Drain and serve topped with the chicken mixture and grated Parmesan cheese.
    1/4 cup Parmesan
