  • Place the grits in the slow cooker and pour the boiling water over them, stirring until smooth.
    1 cup grits
  • Set the cooker on low heat and let the grits soak for 10 minutes.
  • Add the remaining ingredients, stirring until the butter is melted.
    2 large eggs, 8 oz pepper Jack cheese, 1/2 cup butter, 4 cups boiling water, 1 pinch Salt, 1 pinch ground pepper
  • Cook covered on low heat for 3 to 4 hours.

Notes

I often serve mine with pan fried shrimp or with poached eggs on top and crispy bacon. Either way is a winner.
