Squash and Apple Soup

Squash and Apple Soup may not be your first combination but they work so well together. The squash is soft and slightly caramel whilst the apple is sweet in contrast. The flavour is superb and then I add the grated cheese. This melts slightly into the soup and marries everything together. Ideal as a starter, or soup course or as a lovely snack with dunking bread.

Instructions

  • Combine all ingredients except the Swiss cheese in the slow cooker and cook covered on low heat for 8 to 10 hours.
  • Puree the soup in an electric blender or food processor.
  • Serve garnished with grated Swiss cheese.
