Pineapple and Black Bean Salsa - Salsa de Piña y Frijoles Negros

Servings: 1 Litre
- 1 cup pineapple chopped, 250 ml, fresh or canned
- 1 cup black beans rinsed and drained, 250 ml
- 1/2 cup lime juice 60 ml
- 1/2 cup cilantro 60 ml, Chopped
- 1 small red onion chopped
- 1/2 cup sweetcorn kernals
- 1 large red bell pepper seeded and chopped
- 1 large green bell pepper seeded and chopped
- 2 cloves garlic finely chopped
- 1 large jalapeño seeded and finely chopped
- Combine all ingredients in a serving bowl.
- Toss thoroughly to combine.
- Serve immediately, or refrigerate for 2 hours and serve chilled.
