Chinese Salt and Pepper Shrimp is a very simple dish that carries loads of flavour with very few ingredients. I have used this time and again, with great success as both a starter and also as a canape. I normally served in a large glass bowl in the middle of a table for buffet or nibbles. As a starter, I normally just serve this on a bed of crisp lettuce. However, don’t forget to use the marinating juices and drizzle over the leaves. The ease at which this is made in only 15 minutes, ignoring marinating time, means a fast tasty dish. Also, the fact this dish is served warm gives it extra flavour and allows the salt, pepper and garlic powder to fully absorb.

Ingredients
- 1 1/2 lbs large shrimp peeled and deveined, 675 g
- 2 tsp Salt 10 ml
- 2 tsp garlic powder 10 ml
- 1 tsp ground pepper 5 ml
- 2 tbsp cornstarch 30 ml, cornflour
- 3 tbsp vegetable oil 45 ml
Instructions
- Combine the shrimp, salt, garlic powder, and pepper in a bowl, tossing to combine well.
- Marinate refrigerated for 1 to 2 hours.
- Toss with the corn-starch.
- Heat the oil in a large skillet over high heat and fry the shrimp in small batches until done, about 2 minutes per side.
- Drain on paper towels and serve immediately
