Texas Style Chilli is a recipe an old friend of my family gave me years ago. He ate this every week and lived to 104 so can’t be too bad for you. It is a little hot but that’s how I like it but adjust the chilli powder until you get your level. Serve as a main dish with crackers for a warming dish all year round. Beautiful.

  • Cut steak into 1/2 inch cubes.
    3 1/2 lb Beef Chuck
  • Brown meat in oil in Dutch oven, remove to bowl and set aside.
  • Reserve 1/2 cup onions- cover-set aside.
  • Add remaining onions, peppers, and garlic to drippings in pan over a medium heat.
    2 cup onion, 3 medium green peppers, 4 cloves garlic
  • Cook 10 minutes stirring occasionally.
  • Add more oil if necessary.
  • Return meat to pan add tomatoes and their liquid and remaining ingredients, except cheese and onions.
    1/4 cup Salad oil, 16 oz tomatoes, 2 oz tomato paste, 1/4 cup chili powder, 1/4 cup sugar, 2 tsp Salt, 2 tsp oregano, 3/4 tsp Pepper
  • Heat to boiling. Reduce heat to low, cover and simmer 1 1/2 hours or until meat is fork tender, stirring occasionally.
  • Spoon chili into large bowl sprinkle cheese on top for garnish.
    1/2 cup monterey jack
  • Pass reserved onion to sprinkle over each serving.
    2 cup onion
