Using a large jug, add the milk, egg yolks, oil and vanilla whisk together to completely mix.
In a separate bowl add the dry ingredients, flour, baking powder, sugar and salt and milk gently.
Add the wet ingredients to the dry ingredients and whisk until there are no lumps. (Use a spatula to stir up any dry ingredients from the base).
Now add the egg whites to a clean bowl and gently whisk until it forms “stiff peaks”.
Add the egg whites to the combined mixture, folding gently to encourage an airy consistency.
Carefully pour the batter mixture into your waffle iron using the instructions for your own iron. (There are so many varieties, it would be impossible to detail the procedures for them all.)
Cook according to your instructions but it should be about 3 minutes in all.
Once cooked, gently remove the waffle(s) from the iron and place on a warmed plate. I keep mine in the oven until they are all cooked.
When all of the batter mixture has been used, serve immediately with the topping of your choice.
