In a large mixing bowl, add the all-purpose flour, seasoned salt and a small pinch of both salt and pepper. Stir well to mix.
In a separate bowl combine the eggs and beat lightly.
In a third bowl ad the breadcrumbs (This is where I like to add a little paprika or cayenne for a little heat).
Place the chicken pieces into the flour mixture making sure all of the meat is coated.
One by one, move the chicken pieces to the beaten egg and dunk gently then onto the breadcrumb.
Make sure the chicken pieces are covered with breadcrumbs and place to one side on a plate.
Add about 2 – 3 inches of oil to a deep sided pan and place over a medium high heat. To test the heat, add a small chunk of bread. If it sizzles almost immediately then it is hot enough.
In batches, add the chicken to the hot oil and fry until golden brown and cooked through. It should only take a few minutes each side to be cooked perfectly but keep an eye on them.
When cooked, remove from the pan using a slotted spoon and drain using kitchen paper.
