Instructions
Fill a 12-cup muffin/cake tin with muffins cup liners.
Preheat the oven to 190C/375F/Gas Mark 5
Using a large mixing bowl, add the sugar, milk, eggs, vanilla extract melted butter and the lemon zest and juice and stir thoroughly to combine.

2 tsp vanilla extract,
2 tbsp lemon juice,
1 ½ cups milk,
1 cup sugar,
½ cup unsalted butter,
1 large lemon
In a smaller bowl, add the baking powder, baking soda, flour and the salt and stir to combine.

½ tsp baking soda,
½ tsp salt,
3 cups flour
Slowly pour the flour mixture into the milk/egg mixture and stir making sure that everything is combined and there are no lumps of flour.
Add the frozen berries and gently mix together. Be gentle as you don’t want to mush the fruit.
2 cups berries
Spoon the muffin mixture into the cup liners equally.
Place in the oven on the middle shelf and bake for 25 minutes or until the muffins have risen and gone a lovely golden colour.
Remove from the oven when baked and allow to cool slightly as the fruit will be piping hot.
