Place a pan of salted water over a high heat and bring to the boil. When boiling, add the trimmed green beans and cook for 4 minutes or until crisp.

When ready, drain the pan and plunge the beans into ice cold water to stop cooking and preserve the colour.
When cold, remove from the water and dry thoroughly with paper towel.
Add the olive oil to a large frying pan and place over a medium high heat.

Once hot, add the garlic, small pinch of salt, pinch of pepper and the chilli flakes and stir for 30 seconds. You want to release the garlic flavour without browning it.

Add the onion and stir fry for 2 minutes to soften.

Add the pepper and beans and continue to sti fry until the peppers have softened and the beans have warmed up again.
