Instructions
Heat vegetable oil in a wok or large skillet over medium-high heat.
1 tbsp vegetable oil
Add minced garlic and ginger and sauté until fragrant.

Add sliced chicken breast to the wok and stir-fry until cooked through.

Stir in sliced bell peppers and onion, and continue to cook until vegetables are tender-crisp.

In a small bowl, mix together soy sauce, oyster sauce, and sesame oil.

Pour the sauce over the chicken and vegetable mixture, and toss to coat evenly.
Add roasted cashew nuts to the wok and toss to combine.

Season with salt and pepper to taste, and cook for an additional 1-2 minutes.
