Ingredients

2 sheets puff pastry
3 medium apples Granny Smith or Bramley, peeled, cored, and diced
1/4 cup granulated sugar
2 tbsp brown sugar
1 tsp ground cinnamon
1/4 tsp ground nutmeg optional
2 tbsp butter
1 tbsp lemon juice
1 large egg free range beaten (for egg wash)
powdered sugar optional

Instructions

Preheat your oven to 200°C / 400°F / Gas Mark 6.
In a medium saucepan over medium heat, melt the butter.

Add the diced apples, granulated sugar, brown sugar, cinnamon, nutmeg (if using), and lemon juice.

Cook, stirring occasionally, until the apples are tender and the mixture is slightly thickened (about 5-7 minutes).
Remove from heat and let it cool.
On a lightly floured surface, roll out each puff pastry sheet to a 12-inch square.

Cut each sheet into four equal squares, resulting in eight squares in total.
Place a spoonful of the cooled apple mixture in the centre of each pastry square.
Fold each square diagonally to form a triangle, enclosing the filling.
Press the edges together with a fork to seal.
Place the turnovers on a baking sheet lined with parchment paper.
Brush the tops with beaten egg for a golden finish.

Bake in the preheated oven for 15-20 minutes, or until the turnovers are puffed and golden brown.
Allow the turnovers to cool slightly on a wire rack.
Dust with powdered sugar before serving if desired.
