Boil water in a pot and cook the noodles according to packet instructions. Drain and set aside.
150 g noodles
Heat the vegetable oil in a pan over medium heat. Add the chopped bacon and cook until crispy. Remove and set aside, leaving the rendered fat in the pan.
1 tbsp vegetable oil, 4 rashers streaky bacon
In the same pan, add the minced garlic and sauté for 30 seconds. Add the diced tomatoes and cook until they soften and break down into a sauce (about 5 minutes).
2 cloves garlic, 2 medium tomatoes
Stir in soy sauce, oyster sauce, rice vinegar, sugar and chilli flakes (if using). Simmer for 2 minutes to allow the flavours to meld.
1 tbsp soy sauce, 1 tbsp oyster sauce, 1 tsp rice vinegar, ½ tsp sugar, ½ tsp chilli flakes
Return the crispy bacon to the pan and add the drained noodles. Toss well to coat everything in the sauce. Drizzle with sesame oil and mix again.

Divide into bowls, garnish with sliced spring onions, and enjoy!
