Preheat your oven to 200°C (180°C fan) or gas mark 6.
Place the chicken breasts between two sheets of cling film and flatten them using a rolling pin or meat mallet until they are about 1cm thick.

Lay the flattened chicken breasts on a clean surface, slightly overlapping to form a larger rectangle.
Season the chicken with salt and pepper.

Evenly sprinkle the cheese over the chicken, followed by the herbs.

Carefully roll the chicken breasts into a tight roll, starting from one end and rolling to the other, ensuring the cheese and herbs are well-enclosed.
Lay the bacon rashers out on a chopping board, slightly overlapping.

Place the chicken roll at one end of the bacon and wrap it tightly, ensuring the bacon covers the entire chicken roll.
Place the bacon-wrapped chicken roll in a baking dish or on a baking tray lined with foil.
Brush the bacon lightly with olive oil to help it crisp up.

Bake in the preheated oven for 35–40 minutes, or until the bacon is crispy and the chicken is cooked through.
Remove from the oven and let the chicken rest for 5 minutes before slicing into portions.
