Slice the avocado in half and remove the pit. Using a spoon, carefully scoop out a bit of flesh from each half to create a larger cavity for the toppings.
1 large ripe avocado
Place the avocado halves on a baking sheet lined with parchment paper or aluminium foil.
In a small bowl, mix together the diced bell pepper and tomato. Season with salt and pepper to taste.

Spoon the bell pepper and tomato mixture into the cavity of each avocado half, dividing it evenly between the two.
Drizzle a little olive oil over the top of each stuffed avocado half.
