In a bowl, mix olive oil, lime juice, garlic, cumin, smoked paprika, chilli, oregano, salt and pepper.
2 tbsp olive oil, 2 tbsp lime juice, 2 cloves garlic, 1 tsp ground cumin, 1 tsp smoked paprika, ½ tsp ground chilli, ½ tsp dried oregano, ½ tsp salt, ¼ tsp black pepper
Add the beef strips and coat well.

Cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavour.
Make the Chilli Dip:
In a small bowl, combine sour cream (or yoghurt), chilli paste, lime juice, and a pinch of salt.

Stir until smooth, then chill until serving.
Cook the Onion
Heat a splash of oil in a pan over medium heat.
Add the sliced yellow onion and cook for 4–6 minutes, stirring occasionally, until softened and lightly golden.

Remove from the pan and set aside.
Cook the Beef:
Heat a large frying pan or skillet over medium-high heat.
Once hot, cook the marinated beef strips for 3–5 minutes, stirring occasionally, until browned and cooked through.
Remove from the heat and keep warm.
Warm the Tortillas:
Heat each tortilla in a dry frying pan for 10–15 seconds per side, or wrap them in foil and warm in a low oven.

Assemble the Tacos:
Place warm tortillas on plates or a platter.
Add a generous portion of the cooked beef to each.
Top with sliced yellow onion and chopped coriander.

Serve the beef tacos immediately with lime wedges and the chilli dip on the side.
