In a bowl, mix the sliced beef with 1 tablespoon of soy sauce, the corn starch and a drizzle of sesame oil. Let it marinate for 10 minutes while preparing the other ingredients.
Boil the egg noodles according to the package instructions, then drain and set aside. Toss with a little sesame oil to prevent sticking.
250 g egg noodles
Heat 1 tablespoon of vegetable oil in a large pan or wok over high heat. Add the marinated beef and sear for 2–3 minutes until browned. Remove from the pan and set aside.
2 tbsp vegetable oil
Add the remaining 1 tablespoon oil to the pan, then toss in the garlic and ginger. Stir-fry for 30 seconds until fragrant. Add the green beans and yellow bell pepper, cooking for 3–4 minutes until just tender but still crisp.
200 g green beans, 2 cloves garlic, 1 tsp fresh ginger, 1 large yellow bell pepper
Return the beef to the pan, then pour in the 2 tablespoons of soy sauce, oyster sauce and hoisin sauce. Stir well to coat everything in the sauce.
Toss in the cooked egg noodles, mixing everything together for another 2 minutes until heated through. If needed, add a splash of water to loosen the sauce.
Sprinkle with black pepper, red pepper flakes (if using), and garnish with sliced spring onions and sesame seeds. Serve hot and enjoy!
