Peel the potatoes and cut them into thin sticks about 1 cm thick.
4 large Russet potatoes
Place in a large pot of cold water and bring to a boil. Parboil for 5 minutes until slightly tender but not falling apart.
Drain and pat completely dry with a clean kitchen towel.
Toss the fries in 2 tablespoons of vegetable oil, season lightly with salt, and spread them in a single layer on a baking tray.

Bake in a preheated oven at 200°C (180°C fan) for 20 minutes. Remove and turn fries, then return to the oven for another 10–15 minutes until golden and crisp.
Make the curry sauce:
Melt the butter in a saucepan and sauté the chopped onion until soft and lightly golden.

Stir in the tomato paste, curry powder, and paprika. Cook for 1–2 minutes to release the spices.
Add the ketchup, sugar, Worcestershire sauce, and water. Stir well and let the sauce simmer gently for about 10 minutes until slightly thickened. Season with salt and pepper to taste.

Cook the sausages:
Heat the oil in a frying pan or on a grill.

Cook the bratwurst sausages over medium heat until browned all over and cooked through, about 8–10 minutes.
4 large German bratwurst sausages
Assemble the dish:
Slice the cooked sausages into bite-sized pieces and place them on a serving plate or tray.
Pour the warm curry sauce generously over the sausage pieces.
Sprinkle with a little extra curry powder for an authentic touch.
Serve the Berlin Bites immediately with the hot homemade fries on the side.
