Heat a frying pan over medium heat. Lay the bacon rashers in a single layer. Cook until deeply golden and crisp on both sides. Turn them with tongs as needed. Transfer to kitchen paper to drain.

Prepare the tomatoes and lettuce:
Slice the tomatoes evenly. Sprinkle lightly with salt and a little black pepper if desired. Wash and dry the lettuce thoroughly. Crisp, dry leaves give the best texture.

Butter the bread:
Spread a thin layer of butter on one side of each slice of bread. This will form the outside of the toastie and help it turn golden.

Assemble the toasties:
Lay two slices of bread butter-side down. Spread a generous tablespoon of brown sauce on the unbuttered side. Add the crispy bacon evenly. Layer the tomato slices on top. Finish with lettuce. Place the remaining bread slices on top, butter-side facing outwards.

Toast until golden:
Place the sandwiches into a preheated sandwich press and cook for 3–5 minutes until golden and crisp. If using a frying pan, cook over medium heat. Press down gently with a spatula. Cook for 2–3 minutes per side until the bread turns golden and crunchy.
Rest briefly and slice:
Remove from heat and allow to rest for one minute. Slice in halves or triangles.
