cider vinegar

peel, finely chop. Or shallot
Instructions
To make the blue cheese sauce, place all of the ingredients into a glass mixing bowl.
I use a fork to blend the ingredients together until smooth.
Add any herbs you like at the end and gently fold them in.
Served at room temperature to bring out the flavour of the cheese.
Notes
Hence the reason for the onion has to be finely chopped so there are no nasty chunks.
sprinkle herbs over the top for added hit
