Ingredients
1large baguettesliced into 12 pieces (about 1 cm thick)
Preheat a grill or frying pan over medium heat. Lightly brush the baguette slices with a bit of olive oil on both sides. Grill each slice for 2-3 minutes per side until crisp and golden.

While the bread is still warm, rub one side of each slice with a peeled garlic clove for a subtle garlicky flavour.

In a mixing bowl, combine the diced tomatoes, chopped onion, basil, olive oil and balsamic vinegar (if using). Season with salt and pepper to taste. Mix gently to combine.
