Ingredients

Tomato Bruschetta Ingredients:

1 medium French baguette sliced into 6 pieces
2 large ripe tomatoes diced
2 tbsp extra virgin olive oil
1 clove garlic minced
1 clove garlic peel
4 leaves basil chopped
salt to taste
pepper to taste
1 tbsp balsamic vinegar optional

Guacamole Bruschetta Ingredients:

1 medium French baguette sliced into 6 pieces
1 large ripe avocado
1 tbsp lime juice
1 small tomato finely diced
1 tbsp red onion chopped
1 tbsp fresh coriander chopped
salt to taste
pepper to taste
1 tbsp olive oil
Fresh parsley for garnish

Instructions

Tomato Bruschetta Instructions:

Preheat the oven to 200°C (400°F). Place the sliced baguette on a baking tray and toast for 5 minutes or until golden brown.

In a bowl, mix the diced tomatoes, olive oil, minced garlic and chopped basil. Season with salt and pepper.

While the baguette is warm, rub the peeled garlic clove over for a background flavour.

Spoon the tomato mixture onto the toasted baguette slices and drizzle with balsamic glaze if desired. Serve immediately.

Guacamole Bruschetta Instructions:

Preheat the oven to 200°C (400°F). Toast the baguette slices for 5 minutes until crisp.

In a bowl, mash the avocado and mix in lime juice, diced tomato, red onion, coriander, salt and pepper.

Spread the guacamole mixture onto the toasted baguette slices, drizzle with olive oil, and garnish with fresh parsley. Serve immediately.
