Mix everything together thoroughly until the herbs and garlic are evenly distributed through the butter.
Place a sheet of baking parchment on the work surface. Spoon the herb butter onto the parchment and shape it into a small log.
Roll the parchment around the butter and twist the ends to secure it. Place it in the refrigerator for at least 1 hour, or until firm.
When ready to serve, slice the chilled herb butter into rounds. Keep the slices refrigerated until needed.
Prepare the Potatoes:
Wash the baby potatoes and cut any larger ones in half. Place them in a saucepan of lightly salted water.

Bring the water to a boil and cook the potatoes for around 15–18 minutes, or until tender when pierced with a knife.
Drain the potatoes well and return them to the warm saucepan. Add the butter, parsley and thyme. Season with salt and freshly ground black pepper.

Gently toss the potatoes until they are coated in the melted butter and herbs. Keep them warm while you cook the remaining ingredients.
Prepare the Vegetables:
Trim the courgette and cut it into thick slices or half-moons. Remove the seeds and white membrane from the red pepper, then cut it into strips.

Trim the green beans and leave them whole or cut them in half.

Heat the olive oil in a large frying pan. Add the courgette and red pepper and cook for 4–5 minutes. Add the green beans and continue cooking until the vegetables are tender but still have some bite.

Cook the Lamb Chops:
Remove the lamb chops from the refrigerator about 15 minutes before cooking.
Pat the lamb chops dry with kitchen paper. Season both sides generously with salt and freshly ground black pepper.

Heat the olive oil and butter in a large frying pan over medium-high heat.
