Core the apples and chop the rest into small cubes.
Place a saucepan over a medium low heat and add the unsalted butter. Once melted, add the apples and lemon juice and cook for 10 minutes or until the apple cube are soft but not mush.
4 large apples, 60 g unsalted butter, ½ medium lemon
Add the sugar, nutmeg and cinnamon and gently stir in. Continue to cook until the sugar has fully melted. Remove from the heat and allow to cool fully.
1 tsp ground cinnamon, ½ tsp nutmeg, 110 g brown sugar
When ready to assemble. Add Greek yoghurt to each glass and then a spoonful of the apple and repeat until the glasses are full making sure that there is a topping of apple.
500 g Greek yoghurt
Place in the fridge until required and serve direct to the table.
