Ingredients

340 g fusilli pasta
225 g cheese shredded/cheddar, mozzarella
3 tbsp unsalted butter
3 tbsp all-purpose flour
475 ml milk
salt to taste
ground black pepper to taste
double cream optional
garlic powder, onion powder etc optional
spinach, chicken, mushroom, sausage optional

Instructions

Bring a large pot of salted water to a boil.
Add the fusilli pasta and cook according to the package instructions until it is al dente.
340 g fusilli pasta
Once cooked, drain the pasta and set it aside.
In a medium saucepan, melt the butter over medium heat.

Once melted, whisk in the all-purpose flour to create a roux. Cook for about a minute until the roux turns a light golden brown.

Gradually add the milk to the roux, whisking constantly to prevent lumps from forming.

Continue to cook and stir until the sauce thickens, then reduce the heat to low.
Gradually add the shredded cheese to the sauce, stirring until it is melted and smooth.

If desired, add the optional heavy cream for extra creaminess.

Season the sauce with salt, pepper, and any other desired seasonings to taste.

Once the cheese sauce is ready, pour it over the cooked fusilli pasta in the pot.
Stir gently to coat each piece of pasta evenly with the sauce.
If using, add any optional sautéed vegetables or cooked protein to the pasta and stir to combine.

Serve the cheesy fusilli pasta hot, garnished with freshly grated cheese and chopped herbs if desired.
