Season the chicken breasts with salt and pepper. Heat a little olive oil in a pan. Cook the chicken for 5–6 minutes on Each side until fully cooked. Allow it to rest, then slice thinly.

Place the pine nuts in a dry pan over medium heat. Stir often for 2–3 minutes until golden. Remove and set aside.
