Place the diced potatoes into a saucepan of cold salted water. Bring to the boil and cook for 10 to 12 minutes until just tender. Do not overcook them.
400 g potatoes
Drain the potatoes immediately and spread them on a tray or large plate. Allow them to cool slightly. This helps them keep their shape and texture.
While the potatoes cool, dice the cucumber and chop the tomatoes. Slice the spring onions and pull the cooked chicken into small pieces.
