Preheat your oven to 200°C (180°C fan)/Gas Mark 6.
Peel and slice the potatoes into thick chips, about 1 cm wide.

Toss the chips in olive oil, season with salt and pepper, and spread them evenly on a baking tray.

Bake in the preheated oven for 25 minutes, turning halfway, until golden and crispy.
While the chips are baking, place each chicken breast between two pieces of cling film or parchment paper. Use a rolling pin or meat mallet to flatten the breasts to about 1 cm thick.
