Chicken with Oyster Sauce is a quick and flavourful stir-fry made with tender chicken pieces, mushrooms, and red peppers coated in a rich, glossy oyster sauce. Served over hot rice and finished with sesame seeds and scallions, it’s a comforting, deeply savoury meal perfect for any night of the week.

Ingredients

500 g chicken breast thigh cut into bite-sized pieces
1 medium red bell pepper sliced
200 g mushrooms chopped
3 cloves garlic minced
2 tbsp oyster sauce
1 tbsp soy sauce
1 tbsp dark soy sauce for deeper colour
1 tsp sugar
1 tsp sesame oil
1 tbsp vegetable oil
4 tbsp water as needed
sesame seeds for garnish
2 medium scallions chopped
250 g cooked rice to serve

Instructions

Pat the chicken pieces dry with kitchen paper and season lightly with a little salt and pepper.

Heat the vegetable oil in a large pan or wok over medium-high heat.

Add the mushrooms and cook for 3–4 minutes until they begin to soften.
200 g mushrooms
Stir in the sliced red pepper and cook for another 2 minutes.

Remove the vegetables from the pan and set aside.
In the same pan, add the chicken pieces. Stir-fry for 5–6 minutes until the chicken is cooked through and lightly browned.
Add the minced garlic and cook for 30 seconds until fragrant.

Return the cooked vegetables to the pan.
Add the oyster sauce, soy sauce, dark soy sauce (if using), sugar, and 3–4 tablespoons of water.

Stir well so everything is coated in a glossy, deep-coloured sauce.
Let it simmer for 2–3 minutes, allowing the sauce to thicken slightly.
Drizzle in the sesame oil and give everything a final stir.

Taste and adjust seasoning if needed (more oyster sauce for richness, more soy for salt, or a splash of water if the sauce becomes too thick).
Spoon the chicken and vegetables over a bed of hot cooked rice.
