125gplain flour
25gunsweetened cocoa powder
2tbspgranulated sugar
1tspbaking powder
¼tspsalt
240mlmilk
1large eggfree range
2tbspmelted buttervegetable oil
1tspvanilla extract
400gpitted cherries in syruplightly drained but with some juices retained

Instructions
Preheat your waffle maker according to the manufacturer’s instructions.
In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder and salt.
125 g plain flour, 25 g unsweetened cocoa powder, 2 tbsp granulated sugar, 1 tsp baking powder, ¼ tsp salt
In a separate bowl or jug, whisk together the milk, egg, melted butter (or oil) and vanilla extract.
240 ml milk, 1 large egg, 2 tbsp melted butter, 1 tsp vanilla extract
Pour the wet ingredients into the dry ingredients and stir until just combined. The batter will be slightly thick—don’t overmix.
Lightly grease the waffle iron. Pour enough batter into the centre to just cover the grid, then close and cook until the waffle is crisp and cooked through (usually 3–5 minutes, depending on your waffle maker).
Place the warm waffles on plates and top generously with the canned cherries and a drizzle of their syrup. Add a spoonful or swirl of whipped cream and enjoy.
