Set to 180°C (160°C fan) or Gas Mark 4. Grease a 1.5-litre pudding basin and line the base with baking parchment.
In a small saucepan, gently melt the 100g dark chocolate with double cream, stirring until smooth. Pour into a small container and freeze for at least 20 minutes until firm.

In a heatproof bowl, melt the 200g chocolate and butter over a simmering pot of water, stirring occasionally. Once melted, remove from heat and let cool slightly.

Whisk together the sugar and eggs until light and fluffy. Fold in the melted chocolate mixture, followed by the flour and vanilla extract, until just combined.
150 g caster sugar, 4 large eggs, 100 g plain flour, 1 tsp vanilla extract
Pour half the batter into the prepared pudding basin. Place the frozen chocolate centre in the middle and cover with the remaining batter.
Bake in the preheated oven for 25 minutes. The cake should have a slightly firm crust but remain soft in the centre.
Let the cake cool in the basin for 10 minutes before inverting onto a serving plate. Melt the white chocolate and drizzle over the top to resemble icing. Add festive decorations as desired.
