In a food processor, combine the almond flour and powdered sugar. Pulse until finely ground and well combined. Transfer the mixture to a large mixing bowl.

In a separate mixing bowl, beat the egg whites with an electric mixer on medium speed until foamy. Gradually add the granulated sugar while continuing to beat. Increase the speed to high and beat until stiff peaks form and the meringue is glossy.

Gently fold the whipped egg whites into the almond mixture using a spatula until just combined. Be careful not to overmix. If desired, add food coloring and flavor extracts or powders at this stage and gently fold until evenly distributed.

Transfer the batter to a piping bag fitted with a round tip. Pipe small circles (about 1 inch in diameter) onto parchment-lined baking sheets, spacing them about 1 inch apart.
Let the piped macarons rest at room temperature for 30-45 minutes to form a skin. Meanwhile, preheat your oven to 300°F (150°C).
Once the macarons have formed a skin, bake them in the preheated oven for 12-15 minutes, or until they are set and firm to the touch. Remove from the oven and let cool completely on the baking sheets.
Once cooled, pair up the macaron shells according to size. Pipe or spoon your desired filling onto the flat side of one shell, then gently sandwich it with another shell.
