Cut the watermelon into bits that your blender can handle removing the seeds as you go. Leave a few small slices to garnish the glass at the end.
450 g watermelon
Add the watermelon, strawberries, honey, Greek yoghurt, coconut water and the mint leaves (see note).
145 g strawberries, ½ tbsp honey, 4 fl. oz water, 8 tbsp Greek yoghurt, ¼ bunch mint
Blitz the mixture until it becomes a smoothies and is the consistency you want. If its too thick, add a little extra water at a time and blitz then check again.
Taste and add extra honey for any additional sweetness.
Serve in chilled glasses with a few mint leaves and a small slice of watermelon.
Notes
Mint - Make sure you keep a few mint leaves for garnish. They add colour and a little extra burst of flavour.
