Dice the tomato and slice the spring onions. If adding any optional ingredients, have them ready.
1 medium tomato, 2 medium spring onions
Place a non-stick frying pan over medium heat and add the olive oil.

Once the oil is hot, add the diced tomatoes and sliced spring onions to the pan. Cook for 2-3 minutes until the tomatoes start to soften and the spring onions become fragrant.
Crack the eggs directly into the pan, spreading them out so they cook evenly among the tomatoes and spring onions.

Sprinkle salt and pepper over the eggs and vegetables. Add any optional ingredients at this stage, such as spinach or kale.

Let the eggs cook for 3-4 minutes until the whites are set but the yolks are still runny. If you prefer firmer yolks, cover the pan with a lid for an additional 1-2 minutes.
If using cheese, sprinkle grated cheddar or crumbled feta over the eggs in the last minute of cooking.
Transfer the fried egg snack to plates. Garnish with fresh herbs, sliced chilli, or a dash of hot sauce if desired.
Serve immediately, perhaps with a slice of toasted sourdough or atop a bed of mixed greens.
