In a small bowl, combine Dijon mustard and wholegrain mustard.
1 tbsp Dijon mustard, 1 tsp wholegrain mustard
Stir in honey for a subtle sweetness and olive oil for smoothness.
1 tsp honey, 1 tsp olive oil
If the sauce feels too thick, add 1–2 teaspoons of water until it reaches a drizzleable consistency.
Taste and adjust: more mustard for heat, more honey for sweetness.
Prepare the toast:
Toast the bread slices until golden brown and slightly crisp. This gives a solid base to hold the layers without becoming soggy.
4 slices bread
Cook the ham or bacon:
For ham: Warm the slices in a pan for 1–2 minutes on each side until heated through and lightly browned.
4 slices ham
For bacon: Fry until it reaches your preferred crispness, about 3–4 minutes per side depending on thickness. Remove from the pan and set aside.
4 slices ham
Fry the eggs perfectly:
Heat a non-stick frying pan over medium-low heat and add a small knob of butter or a teaspoon of oil. Allow it to melt and coat the pan evenly.
Butter
Crack the egg into a small bowl first to avoid shell fragments, then gently slide it into the pan.
2 large eggs
Cook the egg slowly so the whites set without becoming rubbery. Keep the heat low to medium to avoid browning the edges too much.
For a runny yolk, cover the pan with a lid for 1–2 minutes to gently steam the top of the egg while leaving the yolk liquid.
For a slightly firmer yolk, cook a little longer uncovered, checking frequently.
Season lightly with salt and pepper.
Assemble the toastie:
Spread the mustard sauce on one side of each toast slice.
2 tsp mustard sauce
Layer the ham or bacon on two slices of toast, then carefully place the fried egg on top.
Add a handful of lamb’s lettuce for freshness and crunch.
lamb’s lettuce
Top with the remaining slices of toast, mustard side down.
Serve immediately:
The combination of warm toast, runny yolk, savoury ham or crispy bacon, fresh greens, and the tangy mustard sauce makes a Fried Egg Toastie perfect and is best enjoyed right away.
