Preheat the oven to 220°C (200°C fan). Clean the mushrooms and slice them thinly. Peel and finely chop or crush the garlic, then grate the mozzarella if necessary.
Heat the olive oil in a frying pan over a medium heat. Add the sliced mushrooms and cook for approximately 4–5 minutes until they soften and release their moisture.
1 tbsp olive oil, 150 g mushrooms
Add the garlic and cook for another 30–60 seconds, stirring regularly. Season with a little salt and black pepper, then remove from the heat. Cooking the mushrooms first helps prevent the pizza from becoming too wet.
2 cloves garlic, salt, black pepper
Place the pizza base on a baking tray. Spread the passata or pizza sauce evenly over the surface, leaving a small border around the edge.
1 25cm pizza base, 100 g passata
Sprinkle over most of the mozzarella, then distribute the garlic mushrooms across the pizza. Finish with the remaining cheese and dried oregano and chilli flakes if using.
Place the tray in the preheated oven and bake for 12–15 minutes, or follow the cooking instructions supplied with your pizza base.
The pizza is ready when the cheese has melted, the edges are golden and the base is crisp. Thicker bases may need a little longer.
Remove the pizza from the oven and allow it to rest for 1–2 minutes. Add fresh parsley or basil if desired, then slice and serve while the cheese is hot and melted.
