Pat the tuna steaks dry using kitchen paper. This step helps the surface sear well. Place the tuna on a plate. Brush both sides lightly with olive oil. Season with salt and black pepper. Add garlic or herbs if using.
2 large tuna steaks, 2 tbsp olive oil, Salt, Black pepper, 1 clove garlic, 1 pinch dried oregano
Place the tomatoes and onion slices in a bowl. Drizzle them with the remaining olive oil. Season lightly with salt and pepper. Toss gently to coat.

Cooking:
Heat the grill or grill pan over high heat. It should feel very hot before cooking begins.
Place the onion slices on the grill first. Cook them for about 3–4 minutes per side. Turn them once only. They should soften and show light char marks. Remove and keep warm.
Add the tomatoes to the grill. Place them cut-side down. Grill for 2–3 minutes per side. The skins should blister slightly. The flesh should soften but keep its shape. Remove and set aside.
Place the tuna steaks onto the hot grill. Cook for 2–3 minutes on the first side. Turn carefully using tongs. Cook for another 1–2 minutes on the second side. The centre should remain pink and tender. Adjust the time if you prefer it more cooked.
Remove the tuna from the grill. Let it rest for one minute before serving.
To Serve:
Place a tuna steak on each plate. Arrange the grilled tomatoes and onions alongside. Finish with a squeeze of fresh lemon juice just before eating.
