Preheat your oven to 180°C (160°C fan)/350°F/Gas Mark 4. Line two baking trays with parchment paper.
In a large mixing bowl, cream together the softened butter, granulated sugar, and light brown sugar until light and fluffy. This should take about 2-3 minutes with an electric mixer.

Beat in the eggs one at a time, making sure they are fully incorporated before adding the next. Stir in the vanilla extract.

In a separate bowl, whisk together the flour, baking soda, and salt.

Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.
Fold in the chocolate chips, ensuring they are evenly distributed throughout the dough.

Using a tablespoon or a cookie scoop, drop spoonful's of dough onto the prepared baking trays. Make sure to leave enough space between each cookie, as they will spread during baking.
Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centres are still soft.
Allow the cookies to cool on the tray for a few minutes before transferring them to a wire rack to cool completely.
