In a large pot, melt the butter with the olive oil over medium heat.
60 g unsalted butter, 1 tbsp olive oil
Add the sliced onions and cook, stirring occasionally, until they are caramelised and golden brown, about 45 minutes to 1 hour. Be patient, as this slow cooking process is essential for developing the soup's rich flavour.

Add the minced garlic to the pot and cook for an additional 1-2 minutes until fragrant.
