A spicy homemade snack that makes a change from the bulk produced junk you buy in the shops. This can be tailored to your tastes with the spices. Delicious.
Add chickpea flour (besan), rice flour, wheat flour, baking soda, salt and the water to a large mixing bowl and stir together until completely mixed.
5 ½ oz rice flour, 1 ¼ oz chickpea flour, 2 tbsp wheat flour, ¼ tsp baking soda, ½ tsp salt, 475 ml water
Place a large frying pan or wok over a low flame and add the contents of the mixing bowl and stir. Continue to stir until it thickens and begin to keep it shape (like a dough).
Ad the butter and mix together.

Remove from the heat and leave for about 5 minutes. Cover with a large tea towel.
Transfer the dough from the pan into a large bowl and add the cornflour.

Using the palm of your hands, knead the dough until it becomes lovely and smooth and no longer sticks to the mixing bowl.
Using either damp hands or lightly oiled hands cut a small ball of the dough off.
Turn on your fat fryer to a medium heat until the oil is hot.
Roll it in your hands into a stick shape. They do not have to be the same size of shape; in fact its better if they are all different.
When you have formed enough for a batch, carefully add them to the fryer.
Stir the Kurkure in the fat so they don’t stick together and fry until the have turned a lovely golden brown and have a crisp texture.
Remove from the oil and place on kitchen paper to drain excess oil.
Gently place the fried Kurkure into a large bowl and add the spices/coating.
½ tsp garam masala, ½ tsp chilli powder, ½ tsp chaat masala, 1 tsp powdered sugar, ¼ tsp salt
Gently toss the Kurkure and the spices together making sure each treat gets a coating. Doing this while hot means the spices will be absorb into each treat.
Serve as a snack, for movie night, as a nibble and as a side dish to a light lunch and sandwiches
