Mediterranean Chicken is a vibrant dish that combines the rich flavours of olives, aubergine, and sweet baby tomatoes with the fresh brightness of coriander. This healthy and delicious meal is perfect for any occasion, bringing the essence of the Mediterranean to your table.
In a large ovenproof pan, heat the olive oil over medium heat. Add the diced aubergine and cook for about 5-7 minutes, until softened and slightly browned.
1 tbsp olive oil, 1 large aubergine
Add the minced garlic to the pan and sauté for 1 minute. Then, add the halved baby tomatoes and sliced olives, stirring to combine.
200 g baby tomatoes, 2 cloves garlic, 100 g pitted black olives
Push the vegetables to the side of the pan and place the seasoned chicken breasts in the centre. Cook for 2-3 minutes on each side, until lightly browned.
Transfer the pan to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and no longer pink in the centre.
Remove the pan from the oven and let the dish rest for a few minutes. Garnish with freshly chopped coriander before serving.
1/4 bunch fresh coriander
Serve the Mediterranean Chicken hot, with the roasted vegetables alongside. This dish pairs beautifully with a side of couscous or a fresh green salad.
Notes
Chicken legs also work well in this recipe but you do need to adjust for the cooking time as legs take longer than breasts.
