Heat a frying pan over medium heat. Cook the bacon slices until crispy, turning as needed.
8 slices bacon
Remove the bacon and place it on a plate lined with paper towels to drain.
In the same pan, add butter or oil if needed. Crack the eggs into the pan and fry them to your liking (sunny-side up or over easy for runny yolks). Sprinkle with a pinch of salt and pepper.
4 large eggs, 1 tbsp butter, salt, pepper
While the bacon and eggs cook, slice the avocado and tomato. Wash and pat the lettuce leaves dry.
Lay two slices of toasted bread on a flat surface. Spread a layer of relish on each slice.
6 slices bread, 2 tbsp relish
Add a leaf of lettuce to each slice, followed by two slices of tomato, two slices of crispy bacon, and quarter of the sliced avocado.
4 slices tomato, 4 leaves lettuce, 1 medium avocado
Top each sandwich with a fried egg. Then add the second piece of toast per sandwich.
Repeat for the second layer using the remaining half of each ingredient and finally top with the third slice of toasted bread.
Serve immediately while warm. Cut in half for easier eating if desired, and enjoy.
Notes
Tip:For added zest to your New Years Recovery Brunch, sprinkle a little paprika or chilli flakes over the avocado before closing the sandwich. Pair with a hot cup of coffee or freshly squeezed juice for the ultimate brunch experience.
