Place all the ingredients in a food processor and process for 2–3 minutes, or until a sticky dough ball forms.
340 g Medjool dates, 80 g almonds, 25 g unsweetened cocoa powder, 2 tbsp sunflower oil, 1 tsp vanilla extract
Roll 2 teaspoons of the mixture into balls and roll in the extra cocoa powder to coat.
Repeat until all the mixture is used.
