Preheat your oven to 180°C (160°C fan) / 350°F / Gas Mark 4. Line a baking tray with parchment paper.
In a large bowl, cream together the butter, brown sugar and granulated sugar until light and fluffy.
100 g unsalted butter, 80 g brown sugar, 50 g granulated sugar
Beat in the egg and vanilla extract until well combined.

In a separate bowl, whisk together the flour, oats, cinnamon, baking soda and salt.
150 g rolled oats, 100 g plain flour, 1/2 tsp ground cinnamon, 1/2 tsp baking soda, 1/4 tsp salt
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Gently fold in the raisins.

Drop spoonful's of the dough onto the prepared baking tray, leaving space between each biscuit.
Bake for 12-15 minutes, or until the edges are golden brown.
Allow the biscuits to cool on the tray for a few minutes before transferring to a wire rack to cool completely.

Tips:For extra indulgence, add a handful of dark chocolate chips.If you prefer a softer texture, reduce the baking time by a couple of minutes.Store in an airtight container for up to 5 days.
