Juice both oranges, aiming for around 100-120 ml of juice. Strain the juice to remove any pulp or seeds.
2 medium oranges
In a saucepan, combine the double cream, milk, orange zest and half the sugar (about 40 g). Heat the mixture over medium heat, stirring occasionally, until it begins to simmer (do not let it boil). Once warmed, remove from heat.
250 ml double cream, 100 ml whole milk, 75 g caster sugar
In a separate bowl, whisk the egg yolks, remaining sugar, cornflour and a pinch of salt until the mixture is pale and smooth.
3 large egg yolks, 1 tbsp cornflour, 1 pinch salt, 75 g caster sugar
Slowly pour the warm cream mixture into the egg yolk mixture while whisking continuously to avoid curdling. Once combined, pour the mixture back into the saucepan.
Return to medium heat, stirring constantly until the mixture thickens into a custard-like consistency, which should take around 5-7 minutes. Stir in the vanilla extract and orange juice.
1 tsp vanilla extract
Pour the thickened orange cream into serving dishes or small bowls. Let it cool to room temperature before covering with cling film and refrigerating for 2-3 hours to fully set.
Once chilled, top each portion with a slice of twisted orange for garnish. Serve chilled and enjoy!
1 medium orange
