Place the halved strawberries in a bowl. Add the balsamic vinegar and gently toss. Set aside for 10–15 minutes. This step deepens the flavour and adds a slight tang.

Whip the cream:
Pour the double cream into a large bowl. Add the icing sugar and vanilla extract. Whisk until soft peaks form. The cream should hold its shape but still look smooth.
Break the sponge fingers into chunks, or lightly crush the meringues. Spread them evenly across the bottom of your serving dish. Do not press too firmly, as you want to keep some texture.

Add the first cream layer:
Spoon a generous layer of whipped cream over the base. Smooth it gently with the back of a spoon.
Add fruit and Oreos:
Scatter a layer of blackberries over the cream. Then add some of the balsamic strawberries. Finally, sprinkle a portion of the broken Oreos on top.

Add another layer of base, followed by cream, fruit and Oreos. Continue until all ingredients are used. Finish with a decorative top layer of cream, fruit, and extra Oreo pieces.

Chill before serving:
Place the dessert in the fridge for at least 1 hour. This helps the flavours blend and the texture settle.
How to Serve:
Serve chilled with a large spoon. Each portion should include all the layers. This dessert works well as a centrepiece or in individual glasses for a neater presentation.
