Cook for 15-20 minutes, stirring occasionally, until the potatoes are golden and crispy on the outside and tender on the inside. Transfer to a plate and set aside.
In the same pan, heat 1 tbsp of olive oil over medium-high heat.

Add the meatballs and cook for about 8-10 minutes, turning them occasionally until they are browned on all sides and cooked through.
Remove the meatballs from the pan and set them aside.
