Preheat the waffle maker. Lightly grease it with a little melted butter or a quick spray of oil.
In a large bowl, whisk together the flour, sugar, baking powder and salt.
2 cups plain flour, 2 tbsp caster sugar, 1 tbsp baking powder, ½ tsp salt
In another bowl, beat the eggs and then stir in the milk, melted butter, and vanilla extract.
2 large eggs, 1¾ cups milk, ⅓ cup butter, 1 tsp vanilla extract
Pour the wet mixture into the dry ingredients and stir until just combined. Be careful not to overmix — a few small lumps are fine.
Gently fold in the toasted pecans, saving a small handful for topping.
½ cup pecans
Pour enough batter into the preheated waffle iron to cover the grid and cook according to your machine’s instructions — usually around 4–5 minutes, until golden and crisp.
Stack the waffles on a warm plate, top with sliced bananas, scatter over the remaining pecans, and drizzle generously with maple syrup.
