If using fresh raspberries, rinse them thoroughly under cold water and pat them dry with a paper towel. If using frozen raspberries, allow them to thaw slightly at room temperature.
1 cup raspberries
In a blender, combine the raspberries, yogurt, coconut milk, honey or maple syrup (if using), and vanilla extract (if using). Add a few ice cubes if you prefer a chilled dessert.
1/2 cup Greek yogurt, 2 tbsp honey, 1/2 tsp vanilla extract, Ice cubes, 1/4 cup coconut milk
Secure the lid on the blender and blend the ingredients on high speed until smooth and creamy. If the mixture is too thick, you can add more coconut milk until you reach your desired consistency.
Once blended, taste the mixture and adjust the sweetness to your preference by adding more honey or maple syrup if needed. You can also adjust the thickness by adding more yogurt or coconut milk if desired.
Divide the crumbled Weetabix/rolled oats into the base of the serving jar.
1 regular Weetabix
